Hello my name is Derek Forde and I am from Ireland.
Two years ago, I was sitting in a dialysis chair three times a week, watching the clock tick by during four-hour sessions that had become my new reality. I had been diagnosed with FSGS (Focal Segmental Glomerulosclerosis) kidney disease, and despite my best efforts, my kidneys were failing.

During those two years on dialysis, I made every mistake you can imagine. I ate foods that spiked my potassium levels. I struggled with fluid restrictions. I felt deprived and frustrated, watching others enjoy meals I thought I could never have again.
But here's what I learned: kidney-friendly eating doesn't have to mean giving up on enjoying food.
Through trial and error, working closely with my healthcare team, and countless hours of research, I discovered that with the right knowledge and approach, kidney-friendly meals could actually be delicious, satisfying, and varied. I learned to work with my restrictions instead of fighting against them.
The day I received my kidney transplant was life-changing, but the nutrition knowledge I gained during those dialysis years became invaluable. Even post-transplant, maintaining kidney-friendly eating habits helps protect my new kidney and supports my overall health.
